Big, dank and pungent, Cheese (the IPA) is every bit a treat as its namesake, cheese (the cheese). Leaning heavily into the realm of fruity and dank hops with this hazy, golden IPA. Expect notes of overripe mango strawberry & passionfruit, with just a whiff of Mary-Jane. Go on, grab another slice!
Floc. x Verdant Sky In the Sand

Brewed with Nelson Sauvin, Riwaka, Mosaic and Cashmere utilising a technique called hop bursting on the hot side for waves of flavour alongside multiple dry hop additions with some of our favourite varieties. Flaked everything, super soft and delicious.
Deya May Echoes

This beer displays an alternative expression of the plums used to make May Hill. True to type but more nuanced. The primary jammy pluminess takes a backseat to the soft tannins of the skins and the sweet amaretto character from the stones. A zingy sherbert aroma whispers softly over the top.

Simple Things Fermentations Wild Style - Stock Ale

Matured Burton IPA with a mixed culture of wild yeast in oak casks outside the brewery, exposing the wood to the elements for over a year in an attempt to simulate the sort of conditions that gave rise to the strong, vinous stock ales produced in a similar way two or three hundred years ago.

Polly's Dealer's Choice

Going in gently with a boil addition of 7kg of Simcoe for ten minutes, in true Polly’s fashion they couldn’t help themselves and added sliiiightly more hops than planned, with a further 18kg of more Simcoe, Amarillo and Columbus bring marmalade notes to offset against the caramel backbone brought to the party by the grist bill.

We’re welcoming a new arrival to our Proper DIPA family! Proper DIPA Birthday Edition is all that you’d want from a proper DIPA - high on Nelson, moderate on Mosaic, Citra, and Idaho7, with a pinch of Strata for balance. A dank aroma and flavours of mango and apricot puree leads to a smooth but punchy finish.
Left Handed Giant (x Boxcar) Whistling Winds

Bountiful aromas of dried fruits with a hint of cocoa. This is followed by a rich, nutty sweetness and dark liquorice. Fermented with lager yeast, that’s bright and clean, the subtleties of the malt really shine through for a smooth and moreish experience.

Last September, the brew team did their first-ever hop selection trip across to the West Coast of the US, delving into the nitty gritty of hops and selecting the best lots of specific hops for their beers, including Mosaic, which has been used for this batch of Sonoma. You’ll know it’s the birthday batch by the gold text on the labels highlighting the hand-selected hops.

The idea for this beer comes from the Deya sales team. a huge stout with the addition of cocoa nibs and vanilla, and built upon a base of chocolate dark crystal malts.

This coconut, vanilla and oat porter was produced in collaboration with Edward Reeves, widely acknowledged as the world’s longest established photographic studio. The photo on this label was taken in 1912 and shows a road sweeper called Mr Deacon at the top of St Swithuns Terrace in our hometown of Lewes, East Sussex.

A traditional American Imperial stout in peated single malt whisky sherry casks for 6 months. The casks have infused the beer with a warming depth of honey, vanilla and cinnamon while also adding a gentle layer of smokiness.
Polly’s Valley Pine

Always on the lookout for how to work new techniques, tricks, and processes into their beers in order to make them as smashable as physically possible. Polly’s have an eye on future plans with their core range, and commissioned Valley Pine - their take on the classic Kernel-style pale ale with a smattering of Steady thrown in for good measure.
Using Polly’s patented pyramid dry-hop technique in full flow, this beer bursts with all the bright, punchy, tropical notes brought to the table from Mosaic, Citra and El Dorado in descending order, with a clean bitterness from a hearty addition of hot side Mosaic to boot. With BRY-97 bringing a gentle haze to proceedings, here’s to the future.

Ayinger Altbairisch Dunkel

Up until the Second World War, dark beer was the predominant beer type in the Munich area. The hard water found in the region played a special role in producing this speciality. It is brewed from five types of malt (two of which are torrified dark), and it is only lightly hopped.” It is produced using the traditional double fermentation process.
Duration (x Forest & Main) A Shared Sky

Duration and Forest & Main share a love of Belgian, German and mixed-fermentation beers. This dual-release collaboration is a lightly hopped saison utilising local grist, water and Belgian yeast blends in the same ratios. Our recipe has US hops added, while our US friends used UK hops. Together they share a sky and a hemisphere to grow our ingredients, but the terroir and interpretation from each brewer makes this beer uniquely different.

Brewed to be as environmentally-friendly as possible this pale is brewed using only UK ingredients, and barley made with minimal pesticide and fertilizer input. Upfront orange and peach aroma with a clean boy and firm bitterness.
Newbarns (x Donzoko) Autumn

Autumn is a harvest pale ale using a dry-hopped “sauergut” made with cultures from barley grown at Newbarnsfarm. It was then dry-hopped with UK leaf Jester and Cascade.

Newbarns (x Omnipollo) Complicated Dark Beer

This launched last week at Café Beermoth and it’s quite a concoction. Mixing Newbarns Plain Dark Beer with the crazy creations from Omnipollo this was an attempt to make a zero-adjunct pastry stout. Expect chocolate, coffee, liquorice and rich fruit flavours.
Deya (x Beermoth) Have You Got Cask or Is It All Craft?

The staff from Café Beermoth visited Deya in Cheltenham to collaborate on this Strata and UK Chinook pale ale. This was a cask exclusive at the Café over IMBC, and it’s delicious! Floral, orange and pine flavours with a long and dry bitter finish.
RedWillow (x Salt) Calvados Barrel Aged Dubbel Mild

If you can cast your mind back to July, we sent you the first iteration of this fusion beer. This version has been rounded out by calvados barrels for a few weeks and is even better in our opinion.

Brewed for Overtone’s 4th birthday, this 10% Imperial Stout is a hommage to Toblerone bars. A rich and thick chocolate base has cacao, nougat, lactose and Scottish honey added to it. A decadent treat!
Sureshot My Uncle’s a Chimney Sweep

Fruity and light sessionable Saison. Using Saaz and Celeia hops in the kettle and then dry-hopped with a new Czech variety Most. For the ABV this is a fairly full-bodied beer, with a soft mouth feel.
